Whole roasted pig, known in the Philippines as lechon, is one of the favorite dishes of Filipinos. During fiestas, birthdays, weddings, Christmas parties, or any other celebration, it is common to see this dish. It is, in fact, the highlight of most celebrations. There are even times when we crave lechon on ordinary days.
In Cagayan de Oro, which is known to be where some of the country’s best lechon are found, there is good news. The city’s first and currently only restaurant that offers eat-all-you-can lechon buffet (with other delicious Pinoy dishes)—the House of Native Lechon—is now open. Before you head off to enjoy their buffet, you may want to check out some tips on how you can best enjoy the lechon experience.
Most Flavorful Parts
Many people would agree that the most flavorful parts of a lechon are the skin, the ribs, and the belly. Here are the reasons most commonly given on why people love these three parts of a lechon:
- Skin – People love the crunchy goodness of lechon skin, and it helps that the layer of fat that typically clings to the skin adds to its flavor. The skin is especially good when the pig that is roasted is just a few months old (about four to six months) and has just a thin layer of fat. Sometimes there are even strips of meat that get roasted onto the skin, and these are very flavorful as well; these strips of meat make you enjoy lechon skin even more.
- Ribs – Among the things that make CDO lechon one of the best in the country (in the world, even) are the spices used by CDO lechoneros. These spices are typically stuffed inside the pig’s belly prior to cooking, which is why the rib area is one of the best parts of a lechon; it has soaked up all the flavors and is therefore mouthwateringly good. And nibbling the meat from the bone is also a fun experience!
- Belly – Just like the ribs, the lechon belly part right next to it is also full of delicious flavors, having soaked up the goodness of the spices stuffed into the pig prior to roasting. Plus, the fact that the belly is all meat and no bone makes it the best part of a lechon for those who do not care much for nibbling on bones. Yes, you’ll have to wait a while to get to that part, but it sure is worth the wait.
Lechon is enjoyable enough as it is, but there are ways for you to maximize your enjoyment of this all-time favorite Pinoy dish. Of course, each person has a different take on how one can best enjoy a serving of lechon, but where we are concerned, here are the best ways to optimize the lechon-eating experience:
- Eat with your bare hands. Yes, indeed. Kamayan is the way to go when you’re eating lechon. Sure, it will taste just as delicious when you eat it using utensils, but the experience of going kamayan when you’re eating lechon is unbeatable!
- Eat it with plain steamed rice. When there’s lechon, it definitely is NOT the time to go on a no-rice diet. There’s just something about the lechon-steamed rice combo that makes it oh-so-good. Try pairing lechon with any other food—fried rice, pasta, egg noodles—and you’ll be sure to agree that plain steamed rice is the way to go.
- If you’re one of those who love lechon skin, here’s a tip: Look for the parts with the bubbles; these are usually the crispiest parts. Its crispiness is one of the reasons why people love lechon skin, so it’s only logical for you to choose the crispiest part.
- If the layer of fat clinging to the skin is a bit thick, scrape it off. Yes, it adds to the skin’s flavorful goodness, but it can also cause umay (nausea), which destroys the whole lechon experience. Give yourself the chance to eat more of your favorite lechon skin by doing away with the excess fat.
- Get the ice-cold cola out. Yes, you can eat lechon with any other drink, cold or otherwise. But once you try it with ice-cold soda, you probably won’t want any other combo in the future. There are few things more satisfying than that burp you make after enjoying a lechon/steamed rice/ice-cold cola experience.

Another foreign country has chosen the flourishing city of Cagayan de Oro to be the center of its business operation in Northern Mindanao. This time, it is Bosch, the German multinational engineering and electronics company, that has targeted the city of Golden Friendship as their next business hub in the Philippines. Last June 25, 2015, Bosch has released an official statement confirming their plans of making Cagayan de Oro as an addition to their business centers in the country. And just this August 5, 2016, in Barangay Gusa, Bosch officially inaugurated their new business center. Bosch’s newest hub is located at Neo Arcade Building in Gusa.
Present during the inauguration was Andrew Powell—Bosch’s Marketing Manager—who expressed his excitement of opening their 4th business center in the Philippines. In the most recent nationwide census conducted by the Philippine Statistics Authority (PSA), it was revealed that Northern Mindanao’s populace is progressively and quickly growing. Composed of 5 provinces, 9 cities, and 84 municipalities, Northern Mindanao (Region X) now has an estimated 4,689,302 inhabitants.
Among all the places in the region, PSA’s latest census has also shown that the city of Cagayan de Oro—Misamis Oriental’s capital city—is Region X’s fastest growing area. In a span of five years (2010-2015), the city had an average population growth rate of 2.23%. Being considered as Northern Mindanao’s business hub and education center, the boom in CDO’s populace is not that surprising. According to the data released by the PSA, the number of the city’s inhabitants rose from 602,088 in 2010 to 675,950 in 2015. CDO’s current number of residents has already surpassed that of Camiguin Island and Misamis Occidental.

Last June 1, 2016, the City Social Welfare and Development (CSWD) Office of Cagayan de Oro, together with the COCPO (Cagayan de Oro City Police Office), has reinstated the 1994 city-wide curfew for minors. Under City Ordinance No. 4373-94, kids aged 15 and below are ordered to strictly follow the curfew from 10 o’clock in the evening until 5 o’clock in the morning of the following day.
According to Teodoro Sabuga-a, Jr., the chief of CSWD, they have been enforcing the 10 o’clock evening curfew for adolescents during the opening of classes in the city for years now. But with the ongoing plans of the Duterte administration to effectuate teenage night-time restriction across the country, the CSWD and the COCPO have decided to bring back the 1994 city regulation. Apart from protecting the youth, the said city decree will also help us Kagay-anons prepare for and adjust to the upcoming laws and regulations that President Duterte expects to have executed starting June 30.

It has been years now since Lumbia Airport closed its doors and gave way to a bigger and more modern airport facility in Laguindingan, Misamis Oriental. But even though it is no longer operating as a commercial airport, it is still being utilized by the 10th Tactical Operation Group of the Philippine Air Force. However, just this year, it has been announced that the old airport will be rehabilitated into an army base for American soldiers. This has been confirmed by Defense Secretary Voltaire Gazmin last February 1, 2016, after he attended the 46th founding anniversary of the Philippine Army’s 4th Infantry Division as the guest of honor. According to Gazmin, the facility will be built as part of the Enhanced Defense Cooperation Agreement (EDCA) of our country with the USA. The construction of the facility will start later this year, as soon as pertinent documents are finalized.

We’re finally in the last stage of our “eleksyon serye!” After several months of hearing nothing but election ads and political mudslinging on the national news and even on social media, we can finally go back to our old life and routines. There’s no need for us to bash supporters of other candidates or post a lengthy status on our respective Facebook walls about why our candidate is better than the rest. It’s also time for us to say sorry to all those friends we’ve somehow offended because of this very divisive election period. The Filipinos have spoken, and they’ve chosen the tough-talking Mayor of Davao City—Rodrigo Roa Duterte—as the country’s 16th President.
Although the COMELEC has not yet officially declared the results of the election, Duterte’s 15 million + votes are already too high for Mar Roxas’, with 9 million + votes, to surpass. As a matter fact, all four of the other presidential candidates have already conceded and wished the Davao mayor good luck for the next six years. Duterte himself has said, “Let’s all begin healing.”
With a new administration coming our way, everyone has high hopes that things will be better than before. For the last 6 years, President Benigno S.
